Mathieu,

I haven't had time to chime in much lately, but I noticed this thread 
and wondered if anyone suggested the obvious.
Put a coat of Matt varnish on you paint.  It isn't very expensive and 
they have come a long way in the last 10 years.
The super cheap ones still yellow pretty quickly, but most stay 
virtually clear.  Sculpt or Coat makes and excellent one that I have 
been using for about 7 years now.  No yellowing complaints at all.
