We used a stand-alone recorder so that we don't do any editing. We use a multi-disk recorder, which wasn't inexpensive. The old Casette is dirt cheap and still the fastest option if you already have a multi-cassette copier at your church. There is a Sony direct-to-CD recorder at Circuit City for $300. For digital voice quality only, perhaps one of the hand-held digital audio recorders (Intended for note taking) would be the cheapest route. Again, I checked Circuit City, and found a unit (under Office Equipment) for $50. This type of unit can quickly download the recording to your computer via. USB cable. Of course, any modern compter can do the recording directly. But, still the time involved in copying is the issue.
