I am certain they are available that wide, but you would have to find 
a commercial blind source. The sort of place that does 
institutions.  The latching mechanism is easy to disable. For the 
cheap blinds, the latches are not removable, but I have disabled them 
by putting a drop of super glue on the latch itself. (it helps to get 
an old blind and take it apart to see what you are dealing with.

7' wide is pretty big to figure out a quick and easy way to do it on 
a simple stage.  We are starting to go into the world of theatrical 
fly space and rigging.  One issue you will run into with any kind of 
roll drop 7' wide, is that you must support the entire span from only the ends.

One idea that I haven't seen mentioned yet is the idea of a traveler 
curtain.  This is the kind you normally have in your home.  You would 
need to put two of them next to each other (the 3rd can just be "dead 
hung" from the back).  The benefit of this kind of curtain is that 
the weight can be supported in the middle. The draw back is that you 
will need extra space on each side to store the unused curtain.
