Hi Mathieu
You need to think about the direction of the grain of the wood you are carving. I would not want to carve on the end grain if I can help it. I would want to carve with the grain of the wood. Picture the wood as a sandwich the center of the face is like the face of a piece of bread the edge of the bread would be found on the edge of the face, where you would place the ears. I would suggest that the ears be carved separately with the grain running up or down on the "face of the ear", not cross grain-that is hard carving. You can glue blocks of wood on the sides of the head for the ears.
Conrad may be able to explain it better, than I.
  Les

When glueing wood to make blocks for sculpting, is there a recommended
position, so that the joint lines will not show or be problematic in
carving?

Is the glue line harder to carve than the wood itself?
