Hi Mathieu You need to think about the direction of the grain of the wood you are carving. I would not want to carve on the end grain if I can help it. I would want to carve with the grain of the wood. Picture the wood as a sandwich the center of the face is like the face of a piece of bread the edge of the bread would be found on the edge of the face, where you would place the ears. I would suggest that the ears be carved separately with the grain running up or down on the "face of the ear", not cross grain-that is hard carving. You can glue blocks of wood on the sides of the head for the ears. Conrad may be able to explain it better, than I.
