Why not make a body out of sewn cloth filled tight with polyfill? It's easy to hinge, by simply stitching where the bend should be. A few stitches in the back of the legs (joining up and down by thread), and on the insides of the elbows, will bend them a little, and prevent bending backwards. Then you could knit the areas of the skin that show, and felt that. Then you use the clothes to hide the rest.
