Well, I'd try to get tickets to see Terry Fator or one of the other 
vents working there if nothing else. I've also enjoyed Blue Man Group, 
Lance Burton and a few others. Cirque is always good, but a bit pricey. 
Circus Circus has two stages with free shows. The main stage has mostly 
acrobatic and flying acts, with the occasional clown show, and in the 
arcade there is a stage devoted to the clowns with regular shows. 
Excaliber used to have a small stage that variety performers worked on, 
including some marionettists, but I think that's been gone for a few 
years. Ask the concierge at you hotel if they can find something. 
They're pretty good.
And if you are lucky, you might find a non touristy thing by looking in 
the local papers.

BTW, let me know off list where you are staying. I've got a few friends 
and two brother-in-laws out there. Don't know if they will be able to 
hook you up with anything, but they might at least be able to offer 
some advice. Oh, and there is a half price ticket thing (similar to 
TKTS in NYC) out there too. Not too many people seem to know about it. 
Your hotel might be able to hook you up with a freebie or discount, but 
gone are the days of the really cheap shows and food - for the most 
part. It's big dollar stuff now, unless you know where to look.
