The easiest, would be the rolling close and open "doll eye"  mech. Drill
holes through the center of the eye - side to side - which will become the
axis for the eye to open and close. Push a brass rod the size which will
just fit thru the holes you drilled thru the eyes.  Weight the eyes to keep
them open and run a short brass rod through one weight to the other weight.
Place another brass rod just above and slightly back the eyes which will go
from one side of the head to the other.  Add a sting to the weighted area
which will go up and over the brass rod which is above and behind the eyes.
As you pull down on the string the eyes will close.  When you let go of the
string the eyes should open. There are several books on mech. for puppets or
marionettes which show this.
