Yeah, there apparently dozens of strains that might be on the apples
themselves if you're using organic apples,-so I'm told, method I used was
the old fashioned one that depends on the apples and sugar doing it's own
thing without adding yeast. Used to make mead without yeast too-just fill up
a honeytub, the big ones used to collect honey from the spinner that drew it
off the combs(my grandpa kept bees) after the honey had been poured into the
jars but still thickly coated the tub and leave it for at least a year.

uhuh, I was a bit of an anti-nuke type when I lived on the farm,
sterilization method was non existant and chemicals a dirty word.

Yup, that was another problem, I like to drink quantity. 3 wine glasses of
some homebrewed cider and I'd be flat on my back with my legs in the air.
Not a pretty sight. I like it when the % alcohol content is accurately
marked on the bottle without having to suffer the consequences of the suck
it an see method. I like watered down wine, it agrees with me, doesn't make
me fat, or get me legless. Saying that, however, if your cider travels well,
feel free to send me a sample, I might change my mind if it works better.
