We also have one of the most overtly corrupt states in the country, to the extent that it's almost a matter of pride. Ah, beautiful regionalism. -It should. Louisiana's cajun/creole population has been in the backwaters for a long time--since right after the first Treaty of Paris in 1763 when they fled the Labradorian and french colonies of Canookland to get away from the, well, brits. Their recipes rely on local river/bayou food and spices like chile peppers and crawdads.
