I'm from/in louisiana, and the nonlocal staple that is
crucial to the cajun diet is beer. But damn good food,
true. Music's great too. We also have one of the most
overtly corrupt states in the country, to the extent
that it's almost a matter of pride. Ah, beautiful
regionalism. 
-It should.  Louisiana's cajun/creole population has
been in the 
backwaters 
for a long time--since right after the first Treaty of
Paris in 1763 
when 
they fled the Labradorian and french colonies of
Canookland to get away 
from the, well, brits. Their recipes rely on local
river/bayou food and 
spices like chile peppers and crawdads.  Those are
native american as 
are 
60% of the wirld's choices to eat.
