Yeah, you can. "Corning" (soaking in a salt solution) is a preservation
technique, so corned beef should keep pretty well. Actually you could
probably eat fresh beef too, after it sat on the counter. People used to
hang game till it was "ripe"--some people thought you should hang up
game birds by the neck until the body fell off. Made it more tender.
Just cook it first, hey.
