I agree that teaching undergraduates the material is difficult, but I 
have always found that giving them some reading from the primary texts 
very beneficial.  For Kristeva I would suggest the very compact, "In the 
Beginning Was Love: Psychoanalysis and Faith".  It is set up as a series 
of small lectures, it is an easy-ish read (comparitively) and yet 
provides the groundwork for most of her theoretical work.  It also covers 
a diverse range of topics: literature, psychoanalysis, religion, and 
gender issues.  

I think Irigaray's "Thinking Difference" is also a good, easy to read 
primary text that touches on many central issues (recently translated by 
Routledge into English). (This was also a series of lectures, I should 
add).   

Just an idea.
