The difference is a small matter of genocide which emptied North America,
allowing agriculture on very large pieces of land. The larger the farm,
broadly, the more it will produce -- areal productivity, not labor
productivity.  After WW2 corporate agriculture was able to build up land
productivity using new technology -- which is inaccessible to peasant
farmers.
