There may be yet another way to read the character of
Gertrudis (the red-haired sister) in LIKE WATER FOR
CHOCOLATE.  The character may have been employed to point
to Mexico/Latin America's denial of its African roots --
its African heritage being "illegitimate" in this story.

Also, while Gertrudis was the most passionate character,
one should recall that she was moved by Tita's repressed
emotions poured into the meals that she served.  Although
I must agree that Gertrudis as the rhythmic sister is a
worn out stereo-type.
