There is also no word to describe, say, "non-Chinese, Non-Asian". How about the following suggestion(s): 1. Why not simply call is a course on "World Literature". In every country the word "world" (can) refer to all the countries other than the that country itself. That takes care of the non-US part. Since the US literature has a significant relation to the european literature, the idea of non-European is also pretty much captured. 2. Unless you want to include languages other than English, you may also call it non-native English literature. But to me "World Literature" makes a lot of sense.
