I don't know if the following would count as being "obvious suspects" but
here are some suggestions:

Johnson, Charles. MIDDLE PASSAGE (witty and purposefully anachronistic
journey of a slave ship from New Orleans to Africa).

Phillips, Carlyle. CROSSING THE RIVER (one chapter is a fictional journal
of a slave ship captain as he travels down the west african coast)

Diedrich, Maria (ed).  BLACK IMAGINATION AND THE MIDDLE PASSAGE.
