I would also add for your consideration Bart Moore-Gilbert's "Postcolonial Theory". The various readers in the field will also give your students a good overview of the key theoretical issues in Postcolonial Theory and Criticism. There are two with the same name which are good. Colonial discourse/postcolonial theory, one is edited by Peter Hulme, Frances Barker and Margaret Iversen. The other is edited by Patrick Williams and Laura Chrisman. As a non-traditional grad-student I found these works to be very accessible intellectually. Your students should have a lot of fun.
