How about Rethinking English: Essays in Literature, Language, History, edited by Svati Joshi (New Delhi:Trianka, 1991). You might also look at Woman/Image/Text: Feminist Readings of Literary Texts, edited and introduced by Lola Chatterjee (Trianka, 1986). And of course, The =D2ie of the Land: English Literary Studies in India (OUP India, 1992), edited by Rajeswari Sunder Rajan.
