Donald Cosentino--a collections of essays and many, many photographs of paintings, alters, sacred flags and ironwork that came out with the Vodou exhibit that toured a few years ago (started at UCLA's Fowler Museum). Glissant also talks about visual arts in Caribbean Discourse, if I remember correctly.
