Bud's list of alternate woods is a good one...you can add one more to it:
it's called "jelutong".  It's an exotic wood, with similar short-grain
properties making it suitable for carving. It should be available from the
sources mentioned in previous posts. Ray Guyll made some wonderful vent
dummies from it some years ago (before switching to fibreglas).  Whatever
wood you work with, be sure it is properly kiln dried, and be sure to use
laminated boards rather than a solid hunk...the heads will be less prone to
splitting if exposed to variations in temperature and humidity.
