Michael, I would suggest FloraDec or DesignMaster spray paints for your
lobster.  They come in a myriad of shades and adhere well to foam.  We
use them in our puppet classes and even little kids (we use *lots* of
ventilation and supervision) can blend shades nicely to create shadows
and highlights.  You can get them at craft shops and floral decoration
supply stores.
