Hi Bill, 

It is called needle-sculpting. You may want to look at Susanna Oroyan's
book "Anatomy of a Doll" (it has some basic instructions). You can use
nylon but if these guys are going to be knocked around a lot I would
suggest a strethcy knit. Good Luck!!!    -Jill H.
