Especially making stuff out there - building a "camp"/lean-to was one of my most favorite things I did with my brothers as a child. and the construction process was the best part. collecting sticks and leaning them agains a tree or horizontal branch kept us happy and thoroughly engrossed for hours. Now, as an artist with education background I advocate exposure to lots of materials with only basic instruction as very mind-expanding for kids. one of my favorites was mixing a batch of plaster and having kids drop it by spoon onto aluminum foil. When it sets and dries a bit - its so fun to watch it suck up water color paint . Then later you can attach a magnet to the back and use it on the refrigerator - or just stick it to a wall..
