Update:
If you want to try Weldbond, go for it. It does so much! But I realise more
and more that Weldbond is a bit too flexible for building bigger props.
Unless you don't mind having to apply  a few more layers than you could
with another less flexible glue. Time is expansive sometimes.

To save time (and supplies!) for stiffness, I prefer using regular
carpenter's glue with torn drip coffee filters. I fidgeted too much
yesterday to try and fit together my two-part life-size human head: (four
layers of coffee filters+weldbond). Too flexible for confort. I finally
managed, but next time I'll go back to carp. glue. Worked great with my
accordeon player puppet. He's thougher than wood.

To make sure, I made an actual test:

Comparison between Weldbond and carpenter's glue(cabinet maker's quality)
Shape for test: half a ping pong ball

4 layers of coffee filters + Weldbond = still flexible, leather thickness,
can flatten it completely without it breaking

4 layers of coffee filters + Carpenter's glue = almost as hard as a walnut
shell, a bit of flex, just enough so it won't break upon impact.
